Summer Recap: Internship #1 and Wedding

Since the last time I wrote a blog post, a couple really important things happened in my life.

  1. I finally saw Moana.
  2. I finished my first dietetic internship and am one step closer to becoming an RD.
  3. I married the man that I am lucky to call mine.

At the beginning of June, I started my dietetic internship at a health department in a neighboring county here in North Carolina. My co-intern and I did a lot of presentations, nutrition tip sheet handouts, and shadowing the dietitians, nutritionists, and childcare employees in the health department. One of the highlights for me was a presentation we gave to a local senior congregate meal site about general nutrition advice for older adults, like staying hydrated, the MyPlate for older adults, etc. The absolute best was being told by one of the attendees that we really helped her. Way too sweet.

Another highlight was teaching the health department employees how to build a salad in a jar. We taught them how to layer the ingredients for maximum satiety and minimum lettuce wilt. Then they got to build their own – they loved it!

A summer bonus was being able to carpool to work with Tommy. To pass the roughly 30 minute commute, we listened to a couple books on tape. My favorite was listening to Harry Potter. I forgot how completely wonderful the first book is.

At the beginning of August, my internship at the health department came to a close and it was finally WEDDING TIME! On the most perfect day of all time, I married my main squeeze in Cleveland, OH.

I didn’t always enjoy wedding planning – I found it stressful and overwhelming a lot of the time – but the day of was AH-MAZING and it was all worth it. The weather. The ceremony. The food. The dance with my dad. It was all perfect. A big thanks to my mom who did a lot of the meetings and implementing of wedding plans while I was at school this year.

The best part of the whole weekend was hands down being able to see all these people who I love and traveled to celebrate with us. I felt overwhelmed with love and happiness.
